Ingredients for Corn Spinach
Spinach – 1 cup
Tomato – 2
Cashew – 8-10
Sweet corn – 1/2 cup
Sugar – 1 tbsp
Kasuri Methi – 1/2 tbsp
Lemon juice – 1 tsp
Red chili – 1/2 tsp
Cumin – 1/2 tsp
Green chili – 2
Asafoetida
Oil
turmeric

Corn Spinach Recipe

To make Corn Palak Recipe, first take the spinach and wash it thoroughly. After blanching put it in cold water. After this, drain the water from the spinach and grind it in a mixer grinder and prepare its puree. Now take a wok and cook chopped tomatoes, cashews and green chillies by adding 1 tsp of oil in it. Fry it till the tomatoes become soft. Now let it cool down. After it cools down, add some water to it and grind it.
Now keep the oil to heat in another pan. Now add cumin seeds to it. When cumin starts crackling, add spinach puree, red chili, turmeric powder and salt to it. Now let it fry for three to four minutes. After this, add tomato puree, corn and dry spices to it. Now mix all these well. After this let it cook for 8 to 10 minutes.

After that put some water in it. Then add kasoori fenugreek and lemon juice to this mixture. After cooking for a while, your delicious Corn Spinach is ready. Now serve it with boondi raita and paratha or roti.
