Dal Bati Recipe: On hearing the name of Dal-Bati, water starts coming in the mouth. Dal-Bati is specially made in the Malwa region of Madhya Pradesh. As much as this dish is liked in Rajasthan, this dish is the pride of Malwa region. If there is a matter of gathering somewhere, then the party of dal-baati happens automatically. This dish is as amazing as it is traditional. Dal-Bati takes more time to make than the usual dishes, but when it is ready and then tasted, its fun is different.

Ingredients for making Dal-Bati
Wheat flour – 500 grams
Semolina (rava) – 125 grams
Desi Ghee – 150 grams
Baking Soda – 1/2 tsp
Ajwain – 1/2 tsp
Salt – as per taste

To make Bati, first of all, take a big deep-bottomed vessel. Now add wheat flour and semolina to it. (Those who like maize can also add some corn flour to the baati flour). Now add 3 tbsp desi ghee to it and mix it well in the flour. Then add carom seeds and salt to taste. When this mixture mixes well, knead it with lukewarm water. Knead the dough a little hard as is usually done for puri dough. Now keep the kneaded dough covered for 20-25 minutes so that the dough rises and sets well.
After this, mash the dough well with oil hands and make it smooth. Now break this kneaded dough in equal proportion and make medium sized balls. Give them the shape of a bati. There are two ways that can be adopted to bake the bati. If you want, you can bake it in a pan or a tandoor, although it is usually not available in homes, in such a situation oven can also be used to bake batis. First of all take the oven and put it on the gas on full flame. After this, to bake the batis, put them on the upper grid of the oven. Instead of keeping the batis too close on the grid of the oven, keep them at a distance. Now keep them and cover the oven for some time. After a few minutes remove the lid and turn the batis. Roast the batis till they turn golden brown from both the sides.
