Ingredients for making Falahari Dahi Bhalle
1 cup sama rice
1/4 cup sago
1 potato boiled
1 inch piece of ginger
2 green chilies
1 tsp rock salt
2 cups curd
2 tsp sugar
1/2 tsp roasted cumin powder
1/4 tsp red or black pepper powder
1/2 cup desi ghee for frying
Green coriander for garnishing
How to make Falahari Dahi Bhalle
To make Falahari Dahi Bhalle, first of all, take sama rice and sago and grind them finely in a mixer. Now fry this mixture lightly on the gas on medium flame for 3-4 minutes. Then take out this mixture in a vessel and keep it to cool down. When it cools down, add finely chopped green chilies and grated ginger to it. Now heat 2 spoons of ghee in a pan and put the mixture of rice and sago in it. Then mix salt in it and slowly mix water as well. Keep in mind that you have taken the mixture of rice and sago in the pan, add double the water and keep stirring it continuously. In the meantime, keep the flame of the gas slow or else lumps may form in the mixture.
When the mixture mixes well, then turn the flame of the gas to medium and keep stirring the mixture continuously. As soon as this mixture starts to thicken completely, then switch off the gas. Then take out this mixture in a big vessel and keep it aside. Now add grated boiled potatoes to this mixture. Then take small balls of this mixture on the palm and make balls. Now heat ghee in a pan and deep fry these bhallas. Keep in mind that as soon as you put them in the oil, do not turn them immediately, only when they come up in the ghee on their own. Fry them till they become golden.
After this, keep the curd ready as well. For this, churn the curd with a whisk and mix sugar, rock salt, red or black pepper and roasted cumin powder in it. Now when you feel like eating curd, then you soak them in water for two minutes before. Then take the Bhalla in a plate and pour curd and tamarind chutney on it. Also add cumin powder, chilli and salt as per taste. Then put chopped green coriander in the last and serve.
