Ingredients for Pumpkin Barfi
Pumpkin (Citaphal) – 1 kg
Desi Ghee – 4 tbsp
Sugar – 250 grams
Khoya (Mawa) – 250 grams
Almonds – 12 (chopped)
Cashew – 12 (chopped)
Cardamom – 6 (crushed)
Pistachios – 1 tbsp (finely chopped)

How to make Pumpkin Barfi
First of all, to make Pumpkin Barfi, wash and peel the pumpkin and take out its seeds. Now grate the pumpkin. Heat ghee in a pan and add grated pumpkin to it. Cover it with a lid and let it cook on medium flame. After a while, cover it again by stirring it until the pumpkin becomes soft. After this, add powdered sugar to the pumpkin and cook it while stirring. After a while you will see that a lot of water is coming out of the pumpkin. In such a situation, cook the pumpkin while stirring it with a spoon and take care that it does not get stuck in the bottom of the pan. Keep cooking it while stirring it till the water of the pumpkin dries up completely.

Now add the remaining ghee to it and fry it while stirring it well. After this, add khoya (mawa) and chopped dry fruits and cook while stirring till it becomes so thick that it starts to freeze. To check whether it is cooked or not, stick it on your fingers, if the strings are seen forming in it, then understand that it has become fit for freezing. Add cardamom powder to it and switch off the flame. Now put ghee in a big plate and turn the prepared mixture in a pan. Let it cool for a while so that it settles. After this cut it with a knife into desired shape. Your pumpkin barfi is ready. Eat yourself during the fast and also feed the guests.
