Ingredients for Lauki Barfi
Gourd – 1 kg
Mawa – 250 grams
Ghee – 1/2 cup
Sugar – 250 grams
Cashew nuts chopped – 14-15
Cardamom powder – 1 tsp
Pistachios – 1 tsp
How to make Lauki Barfi
To make bottle gourd barfi, first peel the bottle gourd and take out its seeds and pulp. After that grate the gourd. Now put 2 spoons of ghee in the pan. Put grated bottle gourd in it and let it cook on low flame. Stir it once in a while and then cover it. When the gourd becomes soft, add sugar to it and cook it well. Keep stirring it after a while so that the gourd does not stick to the bottom of the pan.

After the gourd is cooked, put the remaining ghee in it, then after roasting the gourd well, add mawa and dry fruits. Now mix it well. After this the bottle gourd mixture will be ready to make barfi. Now turn off the flame and add cardamom powder to the mixture and mix it well.
Now take a plate and grease it well with ghee. Now spread the bottle gourd mixture evenly on the plate. Now keep it to freeze. Simultaneously, put chopped cashews and pistachios on top of the barfi and press lightly. The barfi will freeze in about 1 hour. Now cut it into the shape of your choice and serve.
