Ingredients for Masala Tinde
Tinde – 6
Tomato puree – 1/2 cup
Onion paste – 1/2 cup
Ginger, garlic paste – 1/2 tbsp
Curd – 1/2 cup
Coriander Powder – 2 tsp
Turmeric Powder – 1 tsp
Green chilies finely chopped – 3
Red chili powder – 1/2 tsp
Garam Masala – 1/2 tsp
Cumin Powder – 1 tsp
Fennel – 1 tsp
water – as required
Green coriander – 1 tsp
How to make Masala Tinde
To make masala tinde, first take the tinde and peel them and wash them well. Then cut them. Now take a wok and put it on medium flame and heat oil in it. When the oil is hot enough, add fennel and green chilies and let it crackle well. After this, add onion and ginger-garlic paste and fry it well. When the color of this paste starts to turn slightly brown, then add other spices including tomato puree, garam masala, red chili, cumin powder, turmeric, coriander to it.

Now let it fry for some time on medium flame. After some time this paste will start leaving oil. As soon as it leaves the oil, add curd to it. Cook it for a minute, add chopped tinda and mix it. Now cover the pan and let the tinda cook on low flame.
After sometime the tinde will become soft. After this, remove the lid of the pan and let the vegetable fry for 2-3 minutes on medium flame. After that turn off the flame. In this way your masala tinde sabzi is ready. Now garnish the vegetable with green coriander and serve it in dinner with roti or paratha.
