Ingredients for making Punjabi Pinni Laddu
Wheat flour – 2 cups
Tagar – 2 cups
Ghee – 1/2 cup
Dry Coconut Kattukas – 1/2 cup
Gum – 1/4 cup
Cashew nuts – 1/2 cup
Almonds – 1/2 cup
Melon seeds – 1/2 cup
Cardamom powder – 1 tsp
How to make Punjabi Pinni Laddu
To make Punjabi Pinni Ke Laddu, first take a pan and heat 1/2 cup ghee in it. When the ghee becomes hot, put gum in it and fry it well. During this, keep the gas flame on medium. Roast the gum while stirring it until it swells well and its color becomes light brown. Keep in mind that the gas flame should not be strong while roasting the gum because if this happens then the gum will turn brown from above but may remain raw from inside. When the gum is fried well, take it out in a plate. It takes about three minutes to fry the gum well.
Now put almonds in the ghee in which the gum was fried and fry them lightly. Fry it till it turns golden brown. Similarly fry cashews till their color turns golden brown. When dry fruits are roasted well, after that take melon seeds and dry roast them. After this, bake the coconut till it changes color slightly. Now add 1/2 cup of ghee in a pan of ghee and add flour to it and roast it on medium flame till it becomes light brown. When the flour is roasted well and the smell starts coming from it, then turn off the gas. While baking the dough, keep stirring it continuously so that it does not burn.
Now grind the roasted gum, cashew nuts, almonds coarsely. Save some cashew nuts which will be applied on the pinni later. Now mix all the dry fruits well together. Now add tagar to it and mix the mixture well. If the mixture seems dry and there is a shortage of ghee, then more ghee can be added as per the requirement. Now prepare round pinni by pressing with both hands and keep them in a plate by putting a cashew nut on them. In this way your Punjabi Pinni Laddu is ready. To keep it good for a long time, keep it packed in an airtight container.
