Ingredients for making Shahi Bhindi
Bhindi – 500 grams
Tomato (chopped) – 2
Onion (chopped) – 2
Garlic clove – 5
Ginger piece – 1
Green chili – 2
Red chili powder – 1 tsp
Turmeric Powder – 3/4 tsp
Coriander Powder – 1 tsp
Cream – 1 tsp
Curd – 1 tsp
Salt – as per taste
Oil – as required
Bay leaf
How to make Shahi Bhindi
To make Shahi Bhindi, first place a wok on medium flame. Add tomatoes, onions, garlic, green chillies, almonds and cashews and boil them in water. When the onion becomes soft, then turn off the flame and take out the whole mixture and cool it and then grind it. Now take another wok and put oil in it to heat on medium flame. When the oil becomes hot, add bhindi in it and fry it in half. After that take it out in a vessel and keep it. Now again pour some more oil in the same pan and heat it.

When the oil becomes hot, add bay leaf and cinnamon and fry it well. Now put the prepared paste in it and cook it. When the paste is roasted well, add salt, turmeric, red chili powder, coriander powder and curd and stir it well. Add water as required and mix it all well. Now put half fried bhindi in this gravy and cover and cook for about 2-3 minutes.

After cooking, add cream to it and mix it well. Then turn off the gas flame. If you want, you can also add garam masala and kasoori methi at the end. In this way your gravy Shahi Bhindi is ready. Now serve it hot with roti or paratha.
